Open-faced Vegetable Sandwiches were not exactly as popular as they are now. This version of it we may or may not have named after a movie by the same name, since the deli, Pickles, was located next to the Bucks County Playhouse, in New Hope, PA... the same deli would eventually become the Backstage Restaurant.

Ingredients
- 4-6 each Broccoli Floretes
- 4-6 each Cauliflower Pieces
- 8-10 slices Carrots very thin
- 4-5 slices Bell Pepper, Green
- 4-5 slices Bell Pepper, Red
- 4-5 slices Zuccini
- 4-5 slices Yellow Squash
- 1-2 each Mushrooms, Fresh, sliced
- 3-4 slices Mozzarella Cheese
- 1 tbsp. Butter
- 1/4 cup Tamari Sauce
- 10" piece French Bread
- 1 handful Potato Chips
- 1 wedge Kosher Pickle

Instructions
- Melt the Butter in a sauté pan.
- Add the Broccoli, Cauliflower, Carrots, Peppers, Zucchini, Squash and Mushrooms, and sauté till just cooked.
- Strain off the butter and add the Tamari (with a little bit of water if the Tamari is too strong).
- Cover and cook for about 3 minutes.
- Slice the French Bread lengthwise and open it onto a foil-lined sheet pan.
- Drain the vegetables and spread them evenly on the French Bread.
- Top with Mozzarella slices and bake in a hot oven till the cheese is melted.
- Serve with Potato Chips and a Pickle Wedge.
Recipe Notes
This is a nice Vegetarian sandwich as well, if you're a cheese eating Vegetarian.
