Another take on a Chicken Croquette recipe from the fine folks at Food. The base of this recipe can serve a variety of meats and seafood, and veggies, but of course, my favorite is Chicken... which usually is called Chicken but really Turkey.

Ingredients
Main Ingredients
- 2 tbsps. Butter, unsalted
- 1/4 cup Onions, Spanish, finely chopped
- 1/8 cup Flour, All Purpose
- 1/4 tsp. Salt (Sea Salt is the best!)
- 1/8 tsp. Black Pepper
- 1/2 cup Milk
- 2 slices Bread, White, chopped fine
- 1/2 lb. Chicken Breast, Cooked, chopped coursely
For Breading
- 1/8 cup Flour, All Purpose (Enouch to coat 4 croquette patties.)
- 1 each Egg, Beaten
- 1/4 cup Bread Crumbs, Unseasoned (Enouch to bread 4 croquette patties.)
- 1 cup Vegetable Oil (Enouch to fry 4 croquette patties.)
Additionally
- 1 recipe Yellow Chicken Gravy (Have to have yellow chicken gravy for the full Croquette Experience... and Mashed Potatoes!!)

Instructions
- Melt butter in saucepan.
- Add onion and sauté until tender.
- Add flour, salt and pepper.
- Add milk slowly and cook, stirring constantly until it thickens.
- Remove from heat and mix in the bread and chicken.
- Chill 1 hour.
- Shape into 4 patties.
- Dredge each patty in flour, then dip in egg and then coat with breadcrumbs.
- Put enough vegetable oil in a skillet to at least 1/2 inch deep when heated.
- Fry croquettes until browned, turning once.
- Drain on paper towels.
Recipe Notes
Serve with Yellow Chicken Gravy on a bed of Mashed Potatoes, and then more gravy!!
