From my Backstage Restaurant days, although I prefer warm spinach salads, if I was stranded on a life boat in the middle of the ocean, I would make this one.

Ingredients
- 4 tbsps. Spinach Salad Dressing 01 You could substitute almost anything for this. One of my favorites is a good, store-bought, Strawberry or Raspberry Vinegarette.
- 1 handful Spinach, Fresh, cleaned Clean, washed, dried, and stems removed.
- 1 each Mushroom, Fresh, sliced
- 1 tbsp. Bacon Bits
- 1 tbsp. Walnuts, Crushed
- 1 clump Sprouts
- 1 each Egg, Hard Boiled

Instructions
- Place 4 ozs. Spinach Salad Dressing in a large mixing bowl.
- Add the Mushrooms, Bacon Bits, Crushed Walnuts and Spinach, and Mix Well by folding.
- Fold out on to large round plate.
- Place Sprouts around the edges and top with grated egg.
Recipe Notes
The variations on Spinach Salad are endless. What makes a Spinach Salad a Spinach Salad is the Spinach, accompanied by mushrooms, some kind of nuts, bacon (or not, for our veggie fans), a hard boiled egg in some form, and a sweet and sourly dressing that leans more sour than sweet... There are no rules, so have fun.
