This was probably the coolest thing I accomplished at Baby Watson's. When I first got there, each of the 5 locations prepared a fresh batch of Guacamole about once a day, and besides the product being different between stores, it was different from day to day at each location, and sometimes with "Please give me my money back" kind of results. So I came up with this relatively fool proof method for Guacamole production: Add 1 cup of this magical Guacamole Mix to 20 Smashed Avocados, and voila, perfect, consistent Guacamole all the time at all our stores. I would provide each outlet with a one quart bottle of this mix per week. It's very easy to make a keeps almost forever at room temperature.

Ingredients
- 4 tbsp. Honey
- 1/2 quart Tamari
- 3/4 cup Garlic, Granulated
- 2 tbsp. Tabasco Sauce
- 1/4 quart Lemon Juice
- 2 tbsp. Coriander, ground
- 2 tbsp. Pepper, Black, Ground
- 1 tbsp. Chinese Hot Oil (Chili Oil, Mongolian Fire Oil, etc...)

- Combine all ingredients and mix well.
- Store in air tight jar. Refrigeration not needed.
Recipe Notes
To make a batch of Guacamole: Halve, remove the pit, peel and smash with a fork, 20 ripe Avocadoes. Add 1 cup of the Guacamole Mix and mix well. Store in an air-tight container under refrigeration.
