Hummus (Baby Watson’s)
This is the Bulk Hummus recipe I developed for Baby Watson’s stores. It was also my first attempt at making Hummus from scratch, and the local hummus Connoisseurs in Cambridge loved it, so I guess I did OK. This recipe makes about 3/4 gallons of Hummus.

Ingredients
Instructions
  1. Place 1/2 of the above ingredients in a food processor.
  2. Process till smooth. Scrape the sides with a spatula, and process again till smooth.
  3. Scrape the batch into a large mixing bowl, and then repeat the process for the rest of the ingredients.
  4. Mix the 2 batches together till combined and smooth.
  5. Store in well sealed containers, refrigerated.
Recipe Notes

This recipe freezes well, but thaw completely in the refrigerator over night before using, and then make sure to stir it a little first.  It will keep in the refrigerator fro about 5 days.
